4 professionals. 10 minutes of their time. Ask them four questions. Prepare and serve.

JUSTIN UNSWORTH

Proprietor, Medcalf Bar

TASTE When you've worked late, what's your favourite thing to eat at home?

JU I love Far East food so something like Malaysian chicken curry with rice noodles. Or of course I might just have a doner kebab.

TASTE What's a food trend you think will be big in the next year?

JU Definitely the meteoric rise of food trucks. Watch out for Spit & Roast.

TASTE Which is your favourite place to eat out?

JU Anywhere doing American BBQ and I love Scott's and Le Gavroche.

TASTE Who is your most inspirational chef?

JU Pierre Koffmann.

LAURA AMOS

Founder, The Dessert Deli

TASTE When you've worked late, what's your favourite thing to eat at home?

LA Fresh tomatoes or fresh fruit. I love tomatoes and snack on them all the time. My favourite variety is Santini.

TASTE What's a food trend you think will be big in the next year?

LA Baking and home cooking. I think people are trying to be more experimental and creative in the kitchen instead of eating out. I think cookery programmes on TV have helped to get people back in the kitchen, cooking from scratch again.

TASTE Which is your favourite place to eat out?

LA A little Argentinian steak restaurant on Northcote Road, called La Pampa. They do the best fillet steak with home-made chunky chips. I'm a great believer of you pay for what you get. There's nothing worse than leaving a restaurant hungry or feeling ripped off.

TASTE Who is your most inspirational chef?

LA I have worked with quite a few inspirational chefs in my time, for all different reasons. However, women in the kitchen inspire me; it's a tough life as a female chef. You're always fighting your corner and having to constantly prove yourself. I definitely had to, working in a predominantly male environment.

TOM OLDROYD

Executive Chef, Polpo Restaurants

TASTE When you've worked late, what's your favourite thing to eat at home?

TO Anything and a glass of wine. For dehydration reasons I will always crave pickles and salty foods after a long night in a hot kitchen. So salamis, pickles and cheeses always go down well.

TASTE What's a food trend you think will be big in the next year?

TO Who knows? It feels like everyone wants to go back to basics and perfect the understated food items of the past that never quite reached their potential. The perfect meatball, scotch egg, hot dog, burger. Please no more burgers. Maybe the rise of the restaurant take away offer? Or more accessible street food offers?

TASTE Which is your favourite place to eat out? TO It depends on what I want to eat at the time. There are so many good places to eat at the moment in and around Soho and Covent Garden, it would be difficult to pick a favourite. For BBQ - Pitt Cue. Noodles - Koya. Tapas - Copita. British - Quo Vadis.

TASTE Who is your most inspirational chef?

TO My time working at Alastair Little on Frith Street was my most inspirational. Although I never got to work with Alastair himself I did work with his co-chef Juliet Peston. I took a lot of my inspiration from the multitude of books and recipes that lined his private dining room.
